Abstract

The theme of this article arises from the desire to analyze the culinary culture of the city of León and to observe with different eyes what perhaps to few Mexicans could seem relevant; a questioning that starts from a street tradition, a custom so rooted, habitual and even common, that even seems to fall into the routine obviousness without giving it more value than that of being a simple street snack: the phenomenon of tacos and tortas. Through this text we share reflections that are postulated after an investigation carried out about the phenomenon of tacos and tortas and how they become a symbol of culinary identity in the city of León, Guanajuato.
